This award-winning restaurant was the first to bring the farm-to-table trend to the Granite State in 2010 and has served up some seriously good Mediterranean fare ever since.
After getting the chance to travel and experience European restaurant culture, Claudia Rippee and Edward Aloise returned to Manchester with the idea to open a European-style cafe. This follows the European model which fluctuates throughout the day based on the needs of the customers. This means you can expect breakfast, lunch, dinner, and dessert, as well as an all-day selection of coffee, espresso, and wine.
Republic is modern and urban with clean walls accented with dark wood trims and graffiti-style art hanging on the wall. The small venue is made to seem larger, thanks to the wall of windows overlooking Elm Street and the extra outdoor seating offered in warmer weather. The showstopper is the giant bar which doubles as both a full-service bar and barista counter.
A mix! From local business people on lunch to art students out for coffee or a drink or visitors stopping in by recommendation, the great food and a casual atmosphere is a draw to many.
